  • 1 pound ground beef
  • 1 pound ground pork

  • 1 can (14.5 ounces) kidney beans
  • 1 can pinto beans
For the Base
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth
For the Veggies
  • 1 medium onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 4 cloves garlic minced
For the Spice Blend
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper
  • 1 pepper chipotle pepper in adobo minced
  • 1 tablespoon brown sugar

Method
 

Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large heavy-bottom pot over medium heat.
  2. Add diced onion, green bell pepper, and red bell pepper, sauté for about 5 minutes until softened.
  3. Stir in 4 minced cloves of garlic, cook for an additional minute.
  4. Add 1 pound each of ground beef and ground pork, cook until browned for about 8 minutes.
  5. Mix in 2 tablespoons of tomato paste and the spice blend, stirring frequently for 2 minutes.
  6. Combine in the canned diced tomatoes, beef broth, kidney and pinto beans, and minced chipotle pepper.
  7. Bring to a gentle boil, then reduce heat and simmer uncovered for at least 1 hour.
  8. In the last 10 minutes of simmering, stir in 1 tablespoon of brown sugar.
  9. Taste and adjust the seasoning as needed before serving.
  10. Ladle into bowls and let guests add their favorite garnishes.
