Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat for 1-2 minutes.
  2. Add 1 pound of diced boneless, skinless chicken thighs, and cook for 5-7 minutes until browned.
  3. Stir in 4 cloves of minced garlic, 1 tablespoon of grated ginger, and 1 diced onion. Sauté for 3 minutes.
  4. Add 2 sliced carrots and 2 stalks of sliced celery. Cook for 5 minutes until softened.
  5. Pour in 6 cups of chicken broth and bring to a boil.
  6. Add 2 cups of egg noodles and reduce heat to a simmer for approximately 10 minutes.
