  • 1 lb Ground turkey lean
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 1 medium Bell pepper diced
  • 1 can Black beans drained
  • 1 can Diced tomatoes with juice
  • 1 cup Corn frozen or canned
  • 2 tablespoon Olive oil for sautéing
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

  • 1 cup Shredded cheddar cheese optional
  • ¼ cup Fresh cilantro for garnish

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, bring salted water to a boil and add cubed sweet potatoes. Simmer for 10-15 minutes until tender, then drain.
  3. Heat olive oil in a large skillet over medium heat, add diced onion and sauté for 3-4 minutes until translucent.
  4. Stir in minced garlic and diced bell pepper, cook for 2-3 minutes until softened.
  5. Push vegetables to one side, add ground turkey to center, and cook for 5-7 minutes, breaking apart until browned.
  6. Sprinkle paprika, cumin, chili powder, salt, and pepper, mixing well to coat turkey.
  7. Add drained black beans, diced tomatoes, and corn, then simmer for about 5 minutes.
  8. In a large baking dish, layer cooked sweet potatoes evenly, then pour the turkey mixture over them.
  9. Optional: Sprinkle shredded cheddar cheese on top.
  10. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until golden.
  11. Garnish with fresh cilantro before serving.
