  • 1.5 cups brown sugar packed
  • 2 large eggs
  • 1 cup unsulfured molasses
  • 1 cup hot water
Cinnamon Molasses Frosting
  • 0.5 cup unsalted butter softened
  • 0.25 cup cream cheese softened
  • 2 cups powdered sugar
  • 0.25 cup unsulfured molasses
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract
  • milk to adjust consistency

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare the baking pans.
  2. Sift together the dry ingredients in a large mixing bowl.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add eggs one at a time to the butter and sugar mixture, mixing well after each addition.
  5. Mix in the unsulfured molasses until fully integrated.
  6. Gradually add the dry mixture and hot water, alternating between them.
  7. Pour the batter into the prepared pans and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool the cake in pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the frosting, beat together softened butter and cream cheese until smooth.
  11. Gradually add powdered sugar and molasses, mixing until smooth.
  12. Mix in cinnamon and vanilla extract, adjusting consistency with milk if needed.
  13. Frost the cooled cake with the prepared frosting.
