  2. Smash each cooled potato gently to create craggy surfaces.
  3. Pat the sirloin steak dry, season with salt and pepper, and sear in a hot skillet with olive oil for 2-3 minutes on each side.
  4. In the same skillet, add more olive oil if necessary and arrange smashed potatoes cut-side down. Cook until golden and crispy.
  5. Lower heat, add butter, minced garlic, and thyme to the skillet. Sauté for about 1 minute.
