  • ½ cup Walnuts or Pecans chopped
  • ¼ cup Fresh Parsley chopped
For the Creamy Dressing
  • ¼ cup Plain Greek Yogurt
  • ¼ cup Mayonnaise
  • 2 tablespoons Fresh Orange Juice
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Honey (or to taste)
  • Salt and Pepper to taste

Method
 

Preparation Steps
  1. Grate the carrots using a box grater or food processor.
  2. Core and dice the apples into small pieces and add to the bowl.
  3. Finely shred the red cabbage and add to the mixing bowl with raisins or dried cranberries.
  4. Chop the walnuts or pecans and fresh parsley, and fold them into the mixture.
  5. In a separate bowl, whisk together Greek yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper until smooth.
  6. Pour the creamy dressing over the salad mixture and toss gently.
  7. Taste and adjust seasoning as needed.
