- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth.
- Pour the wet mixture into the dry ingredients and fold until just combined. Allow the batter to rest for 5 minutes.
- Preheat a nonstick skillet over medium heat and melt a pat of butter.
- Pour about ¼ cup of batter onto the skillet and cook until bubbles form. Flip and cook until golden brown.
- Serve the pancakes warm with your favorite toppings.
