- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ricotta cheese, powdered sugar, almond flour, vanilla extract, almond extract, and the egg. Stir until smooth.
- In a separate bowl, whisk together all-purpose flour, baking powder, salt, and lemon zest.
- Gradually add the dry mixture to the ricotta mixture and gently mix until combined.
- Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet.
- Bake for 12-15 minutes until lightly golden brown and tops are soft yet set.
- Remove from the oven, allow to cool for a few minutes on the sheet, then transfer to a wire rack.
- Once cooled, dust with powdered sugar.
