Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken (or beef), Hatch chiles, ground cumin, garlic powder, onion powder, and a pinch of salt and pepper. Mix well.
  3. Heat a dry skillet over medium heat and warm each tortilla for about 30 seconds on each side.
  4. Take a warmed tortilla, place a scoop of filling in the center, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour green enchilada sauce evenly over the top.
