- Begin by heating a medium pan over medium heat. Add your scrambled eggs, cooking for about 4-5 minutes until they are fluffy and slightly set, stirring occasionally to ensure they don’t stick. While the eggs are cooking, rinse and drain the black beans. After the eggs are ready, add the black beans to the pan, mixing them gently for an additional 1-2 minutes until warmed through.
- In the same pan, lower the heat slightly and stir in the salsa, cumin, cilantro, and lime juice. Allow the mixture to cook for about 2-3 more minutes, ensuring everything is well combined and heated.
- Once everything is warmed and nicely blended, remove the pan from heat. Transfer the delicious mixture into serving bowls. Now, generously sprinkle shredded cheese on top of each portion.
- Serve your Southwest Breakfast Burrito Bowl immediately while everything is still warm and fresh. Add extra toppings such as jalapeños or corn salsa if desired.
