- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the ripe bananas in a mixing bowl until smooth.
- Combine the rolled oats, nut butter, honey or maple syrup, vanilla extract, baking soda, and cinnamon with the mashed bananas.
- If desired, fold in the chocolate chips gently.
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them out.
- Bake for 12-15 minutes until lightly golden around the edges.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
