  • 1 tablespoon olive oil for cooking
For the Peanut Sauce
  • 1 cup creamy peanut butter the star of the dish
  • 2 tablespoons soy sauce for umami
  • 1 tablespoon rice vinegar for tanginess
  • 1 tablespoon honey for sweetness
  • 1 tablespoon lime juice for freshness
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • ¼ teaspoon red pepper flakes for heat
For the Wraps
  • 4 large whole wheat tortillas as the base
  • 1 cup shredded carrots for crunch
  • 1 cup red bell pepper sliced
  • 1 cup cucumber chopped
  • ¼ cup fresh cilantro chopped
  • ½ cup roasted peanuts chopped

Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat. Add chicken and cook for 6-8 minutes until golden brown and cooked through.
  2. In a medium bowl, combine peanut butter, soy sauce, rice vinegar, honey, lime juice, ginger, garlic, and red pepper flakes. Whisk until smooth.
  3. Lay out tortillas and spread a layer of peanut sauce on each.
  4. Divide cooked chicken among tortillas, placing it in the center.
  5. Top with shredded carrots, red bell pepper, cucumber, and cilantro.
  6. Sprinkle chopped roasted peanuts over the veggies.
  7. Roll each tortilla tightly from the bottom up, tucking in the sides.
  8. Slice each wrap in half diagonally and serve immediately.
