Dressing Preparation
- In a large mixing bowl, combine 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 3 tablespoons of mayonnaise, 1 clove of minced garlic, ¼ teaspoon of salt, and ¼ teaspoon of black pepper. Whisk these ingredients together until they are fully blended and creamy.
Adding Chicken and Veggies
- Gently fold in 2 cups of shredded cooked chicken, ½ cup of chopped sun-dried tomatoes, ¼ cup of thinly sliced red onion, and 2 tablespoons of freshly chopped basil. Stir carefully to combine all the ingredients well.
Assembling the Salad
- Take 4 cups of mixed salad greens and place them on a large serving platter or divide them among individual plates.
Top with Chicken Mixture
- Spoon the dressed chicken mixture generously over the bed of salad greens.
Serving or Chilling
- You can serve this salad immediately, or cover it with plastic wrap and chill in the refrigerator for 15 to 20 minutes.
