Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
  2. In a large pot, bring water to a rolling boil and cook lasagna noodles for 8-10 minutes until al dente. Drain and lay flat to cool.
  3. In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, chopped spinach, egg, garlic powder, onion powder, salt, and pepper. Mix until creamy.
  4. Spread marinara sauce on the bottom of the baking dish. Fill each noodle with the cheese-spinach mixture and roll tightly, placing seam-side down in the dish.
  5. Pour remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella cheese.
  6. Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving. Garnish with fresh basil if desired.
