- Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
- In a large pot, bring water to a rolling boil and cook lasagna noodles for 8-10 minutes until al dente. Drain and lay flat to cool.
- In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, chopped spinach, egg, garlic powder, onion powder, salt, and pepper. Mix until creamy.
- Spread marinara sauce on the bottom of the baking dish. Fill each noodle with the cheese-spinach mixture and roll tightly, placing seam-side down in the dish.
- Pour remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella cheese.
- Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh basil if desired.
