Preparation Steps
  1. Whisk together powdered sugar and cocoa powder until smooth.
  2. Add corn syrup, salt, and peppermint extract; mix to form dough.
  3. Knead dough on a powdered sugar-dusted surface until smooth.
  4. Divide dough, roll into balls, and flatten to discs.
  5. Chill discs on a lined baking sheet in the freezer for 30 minutes.
  6. Melt chocolate chips in 30-second intervals until smooth; add coconut oil if using.
  7. Dip chilled discs into melted chocolate, coat well.
  8. Place on baking sheet, sprinkle with crushed peppermint if desired.
  9. Refrigerate for 20-30 minutes to harden chocolate.
  10. Store in an airtight container in the refrigerator.
