Step-by-Step Instructions for Okonomiyaki
- In a large bowl, combine 2 cups of all-purpose flour with 1 cup of dashi stock, stirring until smooth. Beat in 1 egg until fully incorporated.
- Fold in 2 cups of shredded cabbage and ½ cup of chopped green onions into the batter. If using, add 1 cup of cooked shrimp or your choice of protein and ¼ cup of pickled ginger.
- Place a non-stick skillet or griddle over medium heat and lightly oil the surface. Preheat for a couple of minutes.
- Pour a portion of the batter onto the skillet, shaping it into a pancake about ½ inch thick. Cook for 4-5 minutes until the bottom is golden.
