- Preheat the oven to 200°F (93°C). Line a baking sheet with parchment paper.
- Beat egg whites in a clean mixing bowl on medium speed until foamy, about 2-3 minutes.
- Add cream of tartar and continue mixing until soft peaks form, approximately 2-3 minutes more.
- Gradually introduce granulated sugar, one tablespoon at a time, while increasing mixer speed to high. Beat for 5-7 minutes until glossy and stiff peaks form.
- Gently mix in vanilla and almond extract using a spatula.
- Transfer meringue into a piping bag fitted with a large round tip.
- Pipe small circles onto the prepared baking sheet for bodies (1.5 inches) and heads (1 inch).
- Optionally, pipe additional small circles on top of the head circles for hats.
- Bake for about 2 hours until completely dry to the touch.
- Turn off the oven and let the meringues cool inside for 1 hour.
- Carefully remove meringues from parchment using a spatula.
- Stack a smaller meringue head on top of a larger body.
- Attach mini chocolate chips as eyes and an orange candy for the nose using melted chocolate or icing.
- Place mini marshmallows as buttons and hats on the snowmen.
- Sprinkle with colored sprinkles or edible glitter.
- Serve and enjoy your Meringue Snowmen Cookies on a festive platter.
