Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the marinade ingredients and whisk until well blended.
  3. Place the pork tenderloin in a resealable bag or shallow dish, pour the marinade over it, seal, and refrigerate for at least 30 minutes.
  4. Remove the pork from the marinade, pat dry with paper towels.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  6. Sear the pork tenderloin on each side for 3-4 minutes until golden brown.
  7. Pour the reserved marinade over the seared pork in the skillet.
  8. Transfer the skillet to the oven and roast for 15-20 minutes until the internal temperature reaches 145°F (63°C).
  9. Remove from the oven and let the pork rest for 5-10 minutes.
  10. Slice the pork into medallions and drizzle with pan juices. Garnish with fresh thyme sprigs if desired.
