Cooking Steps
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the marinade ingredients and whisk until well blended.
- Place the pork tenderloin in a resealable bag or shallow dish, pour the marinade over it, seal, and refrigerate for at least 30 minutes.
- Remove the pork from the marinade, pat dry with paper towels.
- In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
- Sear the pork tenderloin on each side for 3-4 minutes until golden brown.
- Pour the reserved marinade over the seared pork in the skillet.

- Remove from the oven and let the pork rest for 5-10 minutes.
- Slice the pork into medallions and drizzle with pan juices. Garnish with fresh thyme sprigs if desired.
