Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, rolled oats, protein powder, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together honey (or maple syrup), applesauce, and eggs until smooth.
  4. Add the wet ingredients to the dry ingredients and stir gently until a dough forms.
  5. Fold in chopped nuts and dried fruit until evenly distributed.
  6. Using a cookie scoop, drop tablespoon-sized portions onto the baking sheet and flatten slightly.
  7. Bake in the preheated oven for 12-15 minutes until edges are golden.
  8. Remove from the oven, allow to cool on the baking sheet briefly, then transfer to a wire rack.
  9. Serve warm, optionally topped with Greek yogurt.
