Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a large skillet over medium heat, add a tablespoon of olive oil, chopped onion, and minced garlic. Sauté for about 2 minutes.
- Add the ground turkey to the skillet and cook for 5-6 minutes until browned and fully cooked.
- Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Let simmer for 3-4 minutes.
- Layer half of the sliced zucchini in the greased baking dish, top with half of the turkey mixture, and sprinkle with mozzarella cheese. Repeat the layers.
- Bake uncovered for 30-35 minutes until bubbly and the cheese is melted.
- Let cool for 5 minutes before serving.
