Waffle Preparation
- In a large mixing bowl, combine the cooked and mashed sweet potato, gluten-free flour, sugar, baking powder, and salt. Use a whisk to ensure these dry ingredients are thoroughly blended.
- In a separate bowl, whisk together eggs, milk, oil, and vanilla extract until the mixture is smooth and creamy.
- Pour the wet ingredients into the bowl with the dry ingredients, gently stirring them together until just combined.
- Preheat your waffle iron according to the manufacturer's instructions, lightly greasing it to prevent sticking.
- Once heated, pour the batter into the center of the waffle iron and cook for approximately 4-5 minutes or until golden brown and crisp.
- Carefully remove the waffles from the iron and place them on a warm plate. Serve with maple syrup, fresh fruit, or yogurt.

Notes
Allow the sweet potato to cool slightly before mashing for the best consistency. Store leftover waffles in the refrigerator for up to 3 days or freeze for up to 2 months.
