- In a mixing bowl, toss together 2 cups of diced chicken with ¼ cup sweet chilli sauce, 1 tablespoon olive oil, 1 teaspoon salt, 1 teaspoon pepper, and 1 teaspoon garlic powder. Ensure every piece of chicken is well coated.
- Heat a large skillet over medium heat and add the seasoned chicken mixture. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
- While the chicken cools, preheat your oven to 400°F (200°C) and arrange your flatbreads on a baking sheet.
- Evenly distribute the cooked chicken mixture across each flatbread. Sprinkle 1 cup of shredded mozzarella cheese on top, followed by ½ cup of diced bell peppers and ½ cup of sliced green onions.
- Place the baking sheet in the preheated oven and bake for about 8-10 minutes, until the cheese is melted and bubbly.
- After baking, remove the flatbreads from the oven and allow to cool for a minute. Optionally, sprinkle fresh cilantro on top before slicing and serving.
