  • 1 cup Cashews soaked
  • 1 cup Cilantro leaves
  • 2 tablespoons Lime juice
  • 1 teaspoon Garlic powder
  • 3 tablespoons Water adjust as needed

Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the cauliflower florets with olive oil, chili powder, cumin, and salt.
  3. Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  4. While the cauliflower is roasting, blend soaked cashews, cilantro leaves, lime juice, garlic powder, and a splash of water in a blender until smooth.
  5. Warm your small tortillas in a skillet over medium heat or in the microwave until soft.
  6. Assemble your tacos by adding roasted cauliflower to a warm tortilla and drizzling with cilantro lime crema.
