Ingredients

For the Salad
  • 4 cups fresh broccoli florets use small, bite-sized pieces for maximum crunch and ease of eating
  • 1 medium apple (preferably Granny Smith or Fuji) adds a refreshing sweetness that balances the salad's flavors
  • ½ cup shredded carrots provides vibrant color and a hint of sweetness
  • ½ cup raisins or dried cranberries bring an extra chewy texture and natural sweetness
  • ½ cup sunflower seeds add a delightful crunch and a source of healthy fats
  • ¼ cup red onion, finely chopped offers a zesty bite
For the Dressing
  • ½ cup Greek yogurt or mayonnaise Greek yogurt gives a tangy taste while mayonnaise offers a creamier texture
  • 2 tablespoons apple cider vinegar adds brightness
  • 1 tablespoon honey (or more, to taste) sweetens the dressing
  • Salt and pepper to taste for enhancing flavors

Equipment

  • Mixing Bowl
  • Box grater or food processor

Preparation Steps
  1. Wash 4 cups of fresh broccoli florets thoroughly under cold water. Cut any large florets into bite-sized pieces. Transfer to a large mixing bowl.
  2. Dice 1 medium apple (preferably Granny Smith or Fuji) into small, even pieces and add to the bowl with broccoli.
  3. Shred ½ cup of carrots and toss into the mixing bowl along with ½ cup of raisins and ½ cup of sunflower seeds. Gently toss until well combined.
  4. In a separate bowl, mix ½ cup of Greek yogurt (or mayonnaise), 2 tablespoons of apple cider vinegar, and 1 tablespoon of honey. Add salt and pepper to taste and whisk until smooth.
  5. Pour the dressing over the broccoli mixture in the large bowl and gently fold to coat all ingredients.
  6. If desired, add ¼ cup of finely chopped red onion and mix again. Adjust seasoning with additional salt, pepper, or honey as needed.
  7. Cover the salad and refrigerate for at least 30 minutes before serving.
