Preparation Steps
- Wash 4 cups of fresh broccoli florets thoroughly under cold water. Cut any large florets into bite-sized pieces. Transfer to a large mixing bowl.
- Dice 1 medium apple (preferably Granny Smith or Fuji) into small, even pieces and add to the bowl with broccoli.
- Shred ½ cup of carrots and toss into the mixing bowl along with ½ cup of raisins and ½ cup of sunflower seeds. Gently toss until well combined.
- In a separate bowl, mix ½ cup of Greek yogurt (or mayonnaise), 2 tablespoons of apple cider vinegar, and 1 tablespoon of honey. Add salt and pepper to taste and whisk until smooth.
- Pour the dressing over the broccoli mixture in the large bowl and gently fold to coat all ingredients.
- If desired, add ¼ cup of finely chopped red onion and mix again. Adjust seasoning with additional salt, pepper, or honey as needed.
- Cover the salad and refrigerate for at least 30 minutes before serving.
