Step-by-Step Instructions
  1. Heat a non-stick skillet over medium heat and add a splash of oil or butter. Whisk together your eggs in a bowl until well combined, then pour them into the skillet. Gently stir and cook for about 3–4 minutes, until the eggs are fluffy and slightly set, but still moist. Remove them from heat and set aside to keep warm.
  2. In a separate saucepan, add your black beans along with a splash of water or broth for extra flavor. Heat them over medium-low for about 5 minutes, stirring occasionally, until fully warmed through.
  3. In a large serving bowl, combine the fluffy scrambled eggs and warmed black beans. Gently fold the mixture together using a spatula.
  4. Pour in the salsa, fresh cilantro, cumin, and lime juice into the bowl with your egg and bean mixture. Stir everything gently to combine.
  5. If adding rice, prepare it according to package instructions. Once cooked, fold the rice into the mixture until evenly distributed.
  6. Customize each bowl by adding your favorite toppings, such as jalapeños, corn salsa, or hot sauce.
