- Preheat your oven to 350°F (175°C).
- Lightly grease a medium-sized baking dish with cooking spray or butter.
- In a mixing bowl, combine softened goat cheese, honey, lemon juice, cinnamon, and nutmeg until smooth.
- Carefully core and halve the pears, placing them cut-side up in the prepared baking dish.
- Generously spoon the goat cheese mixture into each pear half, filling them to the top.
- Scatter fresh cranberries evenly over the filled pears.
- Sprinkle chopped walnuts or pecans over the pears and cranberries, if desired.
- Drizzle a little extra honey over the top of the pears.
- Cover with aluminum foil and bake for 25-30 minutes until tender.
- In the last 5–10 minutes, remove the foil to brown the tops.
- Let cool for a few minutes before serving.
- Garnish with fresh mint leaves before enjoying.
