- Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the granulated sugar, light corn syrup, melted unsalted butter, pure vanilla extract, and large egg. Whisk until smooth.
- Add the chopped pecans to the sugar mixture and stir until evenly coated.
- Unroll the Pillsbury Crescent Rolls on the prepared baking sheet, laying out each triangle with the widest end facing you.
- Place 2 to 3 tablespoons of the pecan filling at the widest end of each dough triangle and roll towards the narrow end.
- Bake the rolls in the preheated oven for approximately 8 minutes until they begin to set and edges turn golden brown.
- Brush each roll with the reserved 2 tablespoons of sugar mixture and return to the oven for an additional 5 minutes.
