Preparation
- Preheat your oven to 325°F (163°C). Line a 9x13-inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until coated. Press into the bottom of the pan and bake for 10 minutes. Let cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each, then stir in vanilla.
- In another bowl, combine diced apples, cinnamon, and nutmeg. Fold this into the cheesecake filling.
- Pour the apple cheesecake mixture over the crust and spread evenly.
- Bake for 30-35 minutes until the center is set but slightly jiggly. Cool at room temperature for about an hour.
- Drizzle caramel sauce over the cooled bars and refrigerate for at least four hours, preferably overnight.
- Lift the bars out using the parchment and cut into squares to serve.
