Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line a 9x13-inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until coated. Press into the bottom of the pan and bake for 10 minutes. Let cool slightly.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each, then stir in vanilla.
  4. In another bowl, combine diced apples, cinnamon, and nutmeg. Fold this into the cheesecake filling.
  5. Pour the apple cheesecake mixture over the crust and spread evenly.
