  • 1 lb kielbasa sausage sliced into 1-inch pieces
  • 1 lb fresh green beans trimmed and halved
  • 4 medium potatoes peeled and cubed
  • 1 medium onion chopped
  • 3 cloves garlic minced
Cooking Liquid
  • 2 cups chicken broth
  • 2 tablespoon olive oil for sautéing
Seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
Garnish
  • 1 tablespoon chopped fresh parsley

Method
 

Preparation
  1. Prepare the crockpot by setting it to low heat.
  2. Sauté the kielbasa in olive oil until browned, about 5 minutes.
  3. Cook the onion and garlic in the same skillet until onions are translucent, about 2-3 minutes.
  4. Layer cubed potatoes and green beans in the crockpot, then add onion and garlic mixture on top.
  5. Add the browned kielbasa on top of the layered vegetables.
  6. Pour chicken broth over the mixture to submerge all ingredients.
  7. Season with salt, pepper, and red pepper flakes.
  8. Cover and cook on low for 6-8 hours, or high for 3-4 hours.
  9. Once done, stir ingredients to combine flavors and adjust seasoning if needed.
  10. Garnish with fresh parsley before serving.
