  • 2 tablespoons olive oil Use good quality oil for the best flavor.
For the Veggie Mix
  • 4 cups fresh spinach Fresh spinach wilts beautifully and adds vibrant color.
  • 2 cloves garlic, minced Fresh garlic enhances the aromatic experience of this dish.
For the Seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon red pepper flakes optional, for a little extra heat!
For the Cheese
  • 4 ounces feta cheese, crumbled This tangy cheese is key to the deliciousness.

Equipment

  • large pot
  • Frying pan
  • slotted spoon
  • colander

Method

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Carefully add the gnocchi and cook according to package instructions, usually 2-3 minutes, until they float to the surface. Use a slotted spoon to remove the gnocchi and set them aside to drain in a colander.
  2. In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil shimmers, add the cooked gnocchi to the pan in a single layer. Allow them to cook undisturbed for about 2-3 minutes until they develop a beautiful golden-brown crust on one side.
  3. Gently stir the gnocchi to turn them over and cook for another 2-3 minutes, stirring occasionally, until they are evenly golden brown and crispy.
  4. Reduce the heat to medium and carefully add the minced garlic to the frying pan. Sauté for about 1 minute, stirring constantly, until the garlic becomes fragrant without burning.
  5. Add the fresh spinach to the pan, stirring gently to mix it with the garlic and gnocchi. Cook for approximately 2-3 minutes until the spinach wilts.
  6. Sprinkle the mixture with salt, black pepper, and red pepper flakes if desired. Stir well to evenly distribute the seasonings.
  7. Finally, stir in the crumbled feta cheese, allowing it to soften and bind with the delicious gnocchi and spinach mixture.
  8. Plate the mixture immediately while it's hot, garnishing with additional feta or a sprinkle of red pepper flakes if desired.
