Cooking Steps
- Pound the chicken breasts to an even ½-inch thickness. Season generously with salt and fresh ground black pepper.
- Arrange three shallow dishes for a well-organized breading process: one for seasoned flour, another for whisked eggs mixed with milk, and a final dish for the breadcrumb mixture combined with cheese and pepper.
- Dip each seasoned chicken breast first into the flour, then into the egg mixture, and finally coat with the breadcrumb mixture.
- Heat avocado oil in a skillet over medium heat. Carefully add the breaded chicken and fry for 3-4 minutes on each side.
- Transfer the chicken to a plate lined with paper towels to absorb any residual oil.
- Preheat your oven to 350°F (176°C).
- Spread a layer of marinara sauce on the bottom of your baking dish. Place the crispy chicken on top, add more sauce, sprinkle with fresh basil, and finish with provolone cheese.
