Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather all your ingredients while the oven heats.
  2. In a medium pot, bring water to a boil. Cook diced potatoes for about 10 minutes until tender.
  3. Add broccoli florets and cook for an additional 3 minutes until bright green. Drain and set aside.
  4. Mash the drained potatoes and broccoli in a large mixing bowl until well combined but slightly chunky.
  5. Mix in the grated parmesan, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and paprika.
  6. Form the mixture into compact bites or patties, about 1 inch in size, and place on a lined baking sheet.
  7. Lightly oil the tops of the bites with olive oil spray or drizzle for a crispy exterior.
  8. Bake in the preheated oven for 20-25 minutes until golden brown.
  9. Cool on the baking sheet for 5 minutes before serving.
