- Soak 1 ½ cups of dried chickpeas in a large bowl of water overnight.
- Combine soaked chickpeas, chopped onion, garlic, parsley, cilantro, dill, cumin, cardamom, salt, and black pepper in a food processor.
- Pulse the mixture until coarsely blended.
- Transfer to a mixing bowl and fold in 1 teaspoon of baking soda.
- Allow mixture to rest for 10-15 minutes.
- Preheat the air fryer to 375°F.
- Shape the mixture into small balls or patties.
- Lightly spray each falafel with cooking oil.
- Air fry at 375°F for 12-14 minutes until golden brown.
