- Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions, approx. 11-13 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, cook for 6-8 minutes until golden brown. Remove from skillet.
- Add minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 2-3 minutes until fragrant.
- Pour in heavy cream, stirring to combine. Add dried basil and oregano, simmer for 3-5 minutes.
- Return chicken to skillet, add fresh spinach and drained pasta. Toss gently until combined and spinach wilts.
- Stir in grated Parmesan cheese until melted. Ensure all ingredients are heated through.
