Ingredients
  

For the Lasagna
  • 12 pieces lasagna noodles Cook until al dente
  • 2 tablespoons olive oil For sautéing
  • 1 small onion, diced Adds sweetness

  • 8 ounces mushrooms, sliced Cremini or button mushrooms
  • 4 cups fresh spinach Or 2 cups of thawed, drained frozen spinach
Seasoning & Cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper To taste
  • 2 cups ricotta cheese
  • 1 piece egg Acts as a binder
  • 2 cups shredded mozzarella cheese Divided usage
  • 1 cup grated Parmesan cheese
For the Sauce
  • 2 cups marinara sauce
  • ¼ teaspoon nutmeg Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles in a large pot of salted boiling water for about 8-10 minutes until al dente, then drain.
  3. In a skillet, heat olive oil and sauté diced onion for 5 minutes until translucent.
  4. Add minced garlic and sliced mushrooms, cooking for another 5-7 minutes until mushrooms are tender.
  5. Stir in fresh spinach until wilted, then season with oregano, basil, salt, pepper, and optional nutmeg.
  6. In a mixing bowl, combine ricotta cheese, egg, shredded mozzarella, and half of the Parmesan cheese until smooth.
  7. Spread marinara sauce on the bottom of a baking dish, layer with noodles, ricotta mixture, spinach mixture, and marinara. Repeat layering.
  8. Top with remaining noodles, marinara, mozzarella, and Parmesan cheese.
  9. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden.
  10. Let cool for 10-15 minutes before serving.
