- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles in a large pot of salted boiling water for about 8-10 minutes until al dente, then drain.
- In a skillet, heat olive oil and sauté diced onion for 5 minutes until translucent.
- Add minced garlic and sliced mushrooms, cooking for another 5-7 minutes until mushrooms are tender.
- Stir in fresh spinach until wilted, then season with oregano, basil, salt, pepper, and optional nutmeg.
- In a mixing bowl, combine ricotta cheese, egg, shredded mozzarella, and half of the Parmesan cheese until smooth.
- Spread marinara sauce on the bottom of a baking dish, layer with noodles, ricotta mixture, spinach mixture, and marinara. Repeat layering.
- Top with remaining noodles, marinara, mozzarella, and Parmesan cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden.
- Let cool for 10-15 minutes before serving.
