Step-by-Step Instructions for Spicy Vodka Pasta
  1. Heat the oil in a skillet over medium heat, adding olive oil for about 1 minute.
  2. Sauté minced garlic for 1 minute until fragrant and golden.
  3. Add red pepper flakes and cook for 30 seconds.
  4. Pour in vodka, stir and cook for 2-3 minutes.
  5. Add crushed tomatoes, stir well and let bubble gently.
  6. Season the sauce with salt and black pepper, bringing to a simmer.
  7. Simmer the sauce for about 10 minutes, stirring occasionally.
  8. Cook the pasta in salted boiling water according to package instructions until al dente.
  9. Reserve ½ cup of pasta water, then drain the pasta.

  11. Combine the drained pasta into the skillet with the sauce, tossing gently.
  12. Adjust consistency with reserved pasta water if too thick.
  13. Toss with grated Parmesan cheese until melted and combined.
