For the Chicken
  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
For the Rice
  • 1 cup Chicken broth
  • 1 cup Long-grain white rice
  • ¼ teaspoon Salt for rice
For the Creamy Sauce
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • cups Whole milk
  • 1 teaspoon Garlic powder for sauce
  • 1 teaspoon Dried thyme
  • 1 cup Shredded cheddar cheese
  • ½ cup Grated Parmesan cheese
For Garnish
  • ¼ cup Fresh parsley chopped

Method
 

Instructions
  1. Season both sides of the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper. This step takes about 5 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden brown and fully cooked. Remove from skillet.
  3. In the same skillet, add chicken broth and bring to a simmer. Stir in rice and salt, cover, and cook for 15-20 minutes until tender.
  4. Melt butter in the skillet, add flour to form a roux, and cook for 1-2 minutes until golden.
  5. Slowly whisk in milk and additional chicken broth, stirring until thickened. Mix in garlic powder and thyme.
  6. Add cooked chicken back into the skillet, spoon sauce over the top, and let simmer for 5 minutes.
  7. Serve chicken over rice, garnishing with fresh parsley.
