Step‑by‑Step Instructions for Slow Cooker Cheddar Corn with Bacon
  1. In a skillet, cook 6 slices of bacon over medium heat for 8–10 minutes until crisp. Transfer to a paper towel-lined plate to drain excess grease.
  2. Chop the cooled bacon into bite-sized pieces and set aside. Reserve bacon fat in the skillet.
  3. In the slow cooker, combine chopped bacon, reserved bacon fat, corn, onion, garlic, 2 tablespoons of butter, 1 teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon salt, and ¼ teaspoon black pepper. Add ½ cup heavy cream and stir gently.
  4. Cover and set the slow cooker to low, cooking for 2 to 3 hours. Stir halfway through to ensure even cooking.
  5. About 30 minutes before serving, stir in 1 cup of shredded cheddar cheese until melted and incorporated.
  6. Garnish with 1 tablespoon of chopped fresh parsley before serving.
