Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add farfalle pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté sliced onion for 2-3 minutes until softened and lightly golden. Remove and set aside.
  3. Add sliced mushrooms to the skillet, sauté for about 3 minutes until golden brown. Remove and set aside with onions.
  4. Add fresh spinach to the skillet and cook for about 2 minutes until wilted. Drain excess moisture and set aside.
  5. Sauté minced garlic in the skillet for 30 seconds until fragrant. Add vegetable broth to deglaze, scraping bits from the bottom.
  6. Stir in heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Cook until the sauce thickens, about 3-5 minutes.
  7. Return onions, mushrooms, spinach, and drained pasta to the skillet. Toss until coated in sauce. Season with black pepper and salt to taste.
  8. Serve hot, spoon into bowls, and enjoy!
