- Season chicken breasts with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 6-7 minutes on each side until cooked through. Remove and let rest before slicing.
- Boil salted water in a large pot. Cook pasta according to package instructions until al dente, usually 8-10 minutes. Reserve 1 cup of pasta water before draining.
- In the same skillet, melt butter over medium heat. Sauté minced garlic for 1-2 minutes. Add Cajun seasoning and smoked paprika, stir for 1 minute.
- Pour in heavy cream and chicken broth, bringing to a simmer. Cook for 4-5 minutes until sauce thickens.
- Stir in grated Parmesan cheese until melted. Add cooked pasta, tossing to coat. Mix in reserved pasta water if needed for consistency.
- Slice chicken and add to pasta. Adjust seasoning if necessary. Serve garnished with parsley and extra Parmesan.
