Instructions
- In a food processor, combine 8 oz of crumbled feta cheese, 4 oz of softened cream cheese, and ½ cup of Greek yogurt. Blend on high for about 1-2 minutes until smooth.
- With the processor running, gradually pour in ¼ cup of honey and blend for another 1-2 minutes until fully integrated.
- In a small saucepan, combine 1 cup of fresh or frozen cranberries, 2 tablespoons of sugar, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Cook over medium heat for 5-7 minutes until cranberries burst.
- Remove from heat and let the cranberry mixture cool. Blend for smoother topping or leave it chunky based on your preference.
- In a serving bowl, layer the whipped feta dip as a smooth base, then spoon the warm cranberry mixture over the top.
- Garnish with fresh mint leaves if desired and serve with crackers.
