- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the cranberries, maple syrup, melted butter, Dijon mustard, apple cider vinegar, salt, black pepper, thyme, rosemary, minced garlic, and orange zest. Stir until well blended.
- Pat the whole chicken dry, place it in a roasting pan, and pour half of the cranberry mixture over it. Rub it into the skin thoroughly.
- Place the quartered onion inside the cavity of the chicken.
- Transfer the pan to the preheated oven and roast for 1 hour to 1 hour and 15 minutes, basting halfway through.
- About 15 minutes before the chicken is done, pour the remaining cranberry mixture over it.
- Once fully cooked, remove the chicken from the oven and let it rest for 10 to 15 minutes before carving.
