- Steep the Blue Pea Flowers: Boil 3 cups of water, remove from heat, and add 25-30 dried blue pea flowers. Steep for 20-30 minutes.
- Prepare the Butterfly Pea Ice: Strain the tea, pour into ice trays, and freeze overnight.
- Crush the Frozen Ice: Blend or crush the blue ice cubes until fine, then store in the freezer.
- Make the Lemon Syrup: Combine 1¼ cups lemon juice and 1½ cups sugar in a saucepan. Warm until sugar dissolves and thickens slightly, about 10 minutes.
- Finish the Lemon Syrup: Add ½ cup additional lemon juice to the syrup and let cool.
- Assemble the Glass: Fill a tall glass halfway with crushed regular ice and then layer in crushed butterfly pea ice.
- Add the Syrup and Top Off: Pour in ¼ to ⅓ cup lemon syrup and top with 4 cups club soda. Optionally, add a splash of alcohol.
- Serve and Enjoy: Add extra crushed butterfly pea ice on top and serve immediately with stirring sticks.
