  • 4 slices sourdough or artisan bread

Step-by-Step Instructions
  1. In a small bowl, combine the mashed avocado with lime juice, cilantro, salt, and pepper, mixing until creamy yet slightly chunky.
  2. Take your sourdough or artisan bread slices and spread butter generously on one side of each slice.
  3. On the non-buttered side of two slices of bread, layer shredded chicken, creamy avocado spread, and shredded cheddar cheese. Top with second slice, buttered side out.
  4. Heat a skillet over medium heat for about 2 minutes. Place assembled sandwiches in the skillet and cook for 3-4 minutes until golden brown.
  5. Carefully flip sandwiches using a spatula and cook for another 3-4 minutes until the opposite side is golden-brown and cheese is melted.
  6. Slice sandwiches in half and serve warm with chips, fries, or a light salad.
