- In a small bowl, combine the mashed avocado with lime juice, cilantro, salt, and pepper, mixing until creamy yet slightly chunky.
- Take your sourdough or artisan bread slices and spread butter generously on one side of each slice.
- On the non-buttered side of two slices of bread, layer shredded chicken, creamy avocado spread, and shredded cheddar cheese. Top with second slice, buttered side out.
- Heat a skillet over medium heat for about 2 minutes. Place assembled sandwiches in the skillet and cook for 3-4 minutes until golden brown.
