  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

For the Cheesy Finish
  • 1 cup mozzarella cheese
  • 1 cup sharp cheddar cheese
For the Garnish
  • 2 tablespoons chopped green onions

Step-by-Step Instructions
  1. In a medium mixing bowl, combine chicken thighs with buffalo sauce and honey. Set aside to marinate.
  2. Heat olive oil in a large skillet over medium heat. Add chorizo and cook for 5-7 minutes until browned.
  3. Stir in rice, chicken broth, onion powder, garlic powder, salt, and pepper. Mix well and bring to a simmer.
  4. Nestle marinated chicken thighs on top of the rice mixture. Cover and simmer for 20-25 minutes.
  5. Remove the lid, sprinkle mozzarella and cheddar cheese on top, cover to melt for 3-5 minutes.
  6. Garnish with chopped green onions and serve straight from the skillet.
