- In a medium mixing bowl, combine chicken thighs with buffalo sauce and honey. Set aside to marinate.
- Heat olive oil in a large skillet over medium heat. Add chorizo and cook for 5-7 minutes until browned.
- Stir in rice, chicken broth, onion powder, garlic powder, salt, and pepper. Mix well and bring to a simmer.
- Nestle marinated chicken thighs on top of the rice mixture. Cover and simmer for 20-25 minutes.
- Remove the lid, sprinkle mozzarella and cheddar cheese on top, cover to melt for 3-5 minutes.
- Garnish with chopped green onions and serve straight from the skillet.
