- Start by cutting the chicken breasts into fry-shaped strips, roughly ½ inch wide.
- In a shallow dish, combine the all-purpose flour with garlic powder, onion powder, paprika, salt, and black pepper. Mix thoroughly.
- In another shallow dish, crack and beat the two large eggs until well mixed.
- Place the panko breadcrumbs in a third shallow dish.
- Take each chicken strip and dredge it in the seasoned flour, shaking off any excess.
- Next, dip the floured chicken strip into the beaten eggs, fully coating the chicken.
- Now, roll each coated chicken strip in panko breadcrumbs, pressing gently.
- For the cheesy surprise, take half of the coated chicken strips and place a small amount of shredded mozzarella cheese in the center of each.
- In a large skillet, pour about ½ inch of oil and heat over medium heat.
- Carefully place the coated chicken strips in batches into the hot oil. Fry each batch for about 3–4 minutes on each side.
