  • 1 cup panko breadcrumbs

Step-by-Step Instructions
  1. Start by cutting the chicken breasts into fry-shaped strips, roughly ½ inch wide.
  2. In a shallow dish, combine the all-purpose flour with garlic powder, onion powder, paprika, salt, and black pepper. Mix thoroughly.
  3. In another shallow dish, crack and beat the two large eggs until well mixed.
  4. Place the panko breadcrumbs in a third shallow dish.
  5. Take each chicken strip and dredge it in the seasoned flour, shaking off any excess.
  6. Next, dip the floured chicken strip into the beaten eggs, fully coating the chicken.
  7. Now, roll each coated chicken strip in panko breadcrumbs, pressing gently.
  8. For the cheesy surprise, take half of the coated chicken strips and place a small amount of shredded mozzarella cheese in the center of each.
  9. In a large skillet, pour about ½ inch of oil and heat over medium heat.
  10. Carefully place the coated chicken strips in batches into the hot oil. Fry each batch for about 3–4 minutes on each side.
  11. Once fried, transfer the chicken fries to a paper towel-lined plate to drain any excess oil.
