- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper and cooking spray or oil.
- In a skillet, cook ground beef, onion, and garlic over medium heat for 5-7 minutes until browned; season with salt and pepper.
- Roll out pizza dough into a flat rectangle and slice into 16 even squares.
- Place a scoop of the beef mixture and a square of cheddar in the center of each square; fold and pinch edges to seal.
- In a pot, boil 4 cups of water, stir in baking soda, and simmer; drop dough balls in for 30 seconds and then remove.
- Brush tops of pretzel bombs with beaten egg and sprinkle sesame seeds if desired; place on prepared baking sheet.
- Bake for 15-20 minutes until golden brown and puffed.
- Serve warm with ketchup or mustard for dipping.
