- Generously coat each piece of chicken with Cajun seasoning. Heat a large skillet over medium-high heat and add a drizzle of oil. Sear the chicken for about 4-5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, reduce the heat to medium and add the chopped onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until softened and the onion is translucent. Sprinkle in some extra Cajun seasoning.
- Add 1 cup of uncooked rice to the skillet. Stir for about one minute, allowing the rice to absorb the flavors.
- Pour in 2 cups of chicken broth and stir well. Increase the heat slightly and bring to a gentle simmer. Nestle the seared chicken back in.
- Reduce heat to low, cover, and cook for 20-25 minutes until rice and chicken are cooked through.
- Turn off heat and let sit covered for a few minutes. Fluff the rice gently with a fork and garnish with parsley or green onions.
