Step-by-Step Instructions
  1. Generously coat each piece of chicken with Cajun seasoning. Heat a large skillet over medium-high heat and add a drizzle of oil. Sear the chicken for about 4-5 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, reduce the heat to medium and add the chopped onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until softened and the onion is translucent. Sprinkle in some extra Cajun seasoning.
  3. Add 1 cup of uncooked rice to the skillet. Stir for about one minute, allowing the rice to absorb the flavors.
  4. Pour in 2 cups of chicken broth and stir well. Increase the heat slightly and bring to a gentle simmer. Nestle the seared chicken back in.
  5. Reduce heat to low, cover, and cook for 20-25 minutes until rice and chicken are cooked through.
  6. Turn off heat and let sit covered for a few minutes. Fluff the rice gently with a fork and garnish with parsley or green onions.
