  • 1 cup Red bell pepper, chopped
  • 1 cup Yellow bell pepper, chopped

  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
For Garnish
  • 2 tablespoons Fresh parsley, chopped

Preparation
  1. Preheat the Oven to 425°F (220°C).
  2. Wash and chop all vegetables into bite-sized pieces, setting them aside in a mixing bowl.
  3. Drizzle olive oil over the vegetables and add garlic, salt, pepper, oregano, and thyme. Toss to coat evenly.
  4. Spread vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes until tender and caramelized.
  6. Transfer the roasted vegetables to a serving dish and garnish with chopped parsley.
