  • 4 medium sweet potatoes peeled and diced
  • 1 lb chicken breast boneless, skinless
  • 1 cup BBQ sauce your favorite brand
  • 2 cups broccoli florets
  • 1 cup corn frozen or fresh
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon fresh cilantro for garnish

Method
 

Cooking Steps
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Meanwhile, season the chicken breast with salt and pepper. Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
  4. Remove the chicken from the skillet and shred it. Toss with BBQ sauce.
  5. Add the broccoli and corn to the skillet and sauté for about 5 minutes until heated through.
  6. To serve, layer the sweet potatoes, BBQ chicken, broccoli, and corn in bowls. Garnish with fresh cilantro.
