Cooking Steps
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Meanwhile, season the chicken breast with salt and pepper. Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and shred it. Toss with BBQ sauce.
- Add the broccoli and corn to the skillet and sauté for about 5 minutes until heated through.
- To serve, layer the sweet potatoes, BBQ chicken, broccoli, and corn in bowls. Garnish with fresh cilantro.
